1)Steam Heating (Suitable for: Large central kitchens, existing steam generator facilities)
Steam is introduced into the jacket through a hollow shaft, circulating and rotating within the cavity. Condensate is quickly discharged through a steam trap. This phase change heat transfer method has high latent heat and extremely rapid heating, and the heating process is gentle and does not scorch, making it particularly suitable for high-quality batch processing of dairy products, sauces, and other products.
2)Gas Heating (Suitable for: Restaurants, stir-frying requiring high heat output)
The burner directly heats the heat transfer oil or the wok wall within the jacket from the bottom, resulting in high thermal efficiency and powerful heat. Compared to direct flame heating, the jacket structure acts as a heat buffer and temperature equalization, preserving the "wok aroma" while preventing localized high temperatures from scorching the food.
3)Electric Heating (Suitable for: Laboratories, Small and Medium-Sized Workshops)
Utilize heat-conducting oil as the heat transfer medium, with a U-shaped heating element inserted at the bottom of the jacket. Precise control within ±1℃ is achieved through a temperature controller. It produces no open flame or exhaust fumes, meeting stringent environmental and safety standards.
Equipped with a fully automatic hydraulic lifting arm system, the stirring device automatically lifts the arm to discharge food ingredients after cooking. Such design eliminates the need for manual supervision. The stirrer uses a planetary scraping structure, revolving around the pot while rotating on its own axis. The efficient scrapping stirring ensures that high-viscosity materials are thoroughly tumbled and do not stick to the pot, maximizing the advantage of uniform heating within the jacket.

For operational safety, the pot is equipped with a sensitive pressure gauge and a safety valve (steam type) to ensure that the jacket pressure remains within a controllable range. Furthermore, both the inner and outer pots are made of thickened 304 stainless steel, which is corrosion-resistant and meets food safety standards, ensuring both efficient and hygienic heat transfer.
