Texture Control: When producing jams with fruit pieces, only the slow mixing function is activated, gently mixing to prevent particle breakage. When producing smooth jams, the mixing and homogenization heads are activated simultaneously, breaking down the materials to the micron level during cooking, resulting in an extremely smooth and stable texture.
